Breakfast: Cappuccino Pancakes with Mocha Syrup
You deserve to treat yourself to brunch every now and again. And what better way to do so, than with cappuccino pancakes drizzles with mocha syrup?
In a large mixing bowl combine:
Mix well and pour onto a hot griddle; flipping each side as it become a light, golden brown. Serve with mocha syrup.
To start, get a small sauce pan and whisk together:
Simmer over medium heat for roughly five minutes. Once thickened, pour over pancakes.
Lunch: Chipotle & Coffee Tofu Wrap
For lunch, you are going to discover the power of a coffee marinade. The chipotle and coffee tofu wrap is a light lunch with lots of flavour. Perfect for an early lunch when you need to stay alert in the afternoon.
Start by cutting your block of extra firm tofu (15 ounce.) into 1.5 centimeter wide strips. Cook over medium-low heat for 15 minutes. The sides should be golden and a little dry.
In a food processor, collect:
Transfer the mixture into a medium bowl. Place the cooled tofu into the bowl, being careful to coat each piece fully. Refrigerate for two hours.
Preheat the oven to 190 degrees. Meanwhile, combine your favourite fruits and veggies with the coffee and chipotle marinated tofu into a whole wheat tortilla. Examples include plum tomatoes, spinach, olives, kale, and carrots.
Dinner: Coffee Chili
If you have a light lunch, you might as well as a heavy dinner. Our next recipe is for coffee chili. Start by cooking .5 kg ground beef, 480 mL onion, 1 cup bell peppers and 3 cloves of fresh, crushed garlic in a large pot until browned.
